Ajapsandali or ajapsandali is a fragrant dish made from eggplant, tomatoes, sweet peppers and veal. The process of making ajapsandali is unusual in that all the vegetables are first fried separately and then, seasoned with spices, garlic and fresh herbs, stewed together. This is where the real culinary magic happens.
